
These are amazing, they are packed with vegetables, but you would never be able to tell!
Filling, delicious, and a great way to get your little ones eating vegetables, even if they don’t want too!
Ingredients – minced beef (5% fat – 500g), 3 small red onions, 8 mushrooms, 3 cloves of garlic, 1 tbsp Worcestershire sauce, 3 tbsp tomato purée, 1 tin chopped tomatoes, 1 beef stock cube, 1/3 broccoli, 1/4 cauliflower, 1 carrot, 2 eggs and 5 slices of wholemeal bread (I used Danish low fat, thin slice).
To make:
Preheat the oven to 190C,
Spray cooking oil into a pan, add chopped onion, and crushed garlic. Lightly fry until soft, add minced beef and a beef stock cube, mix and cook until brown. Add the mushrooms,Worcestershire sauce, tomato purée and tin of chopped tomatoes. Heat through until the mushrooms are cooked. Transfer the mixture into a bowl and set aside.
Boil all the vegetables together. Once cooked, blend all the vegetables.
Blend all of the cooked minced beef mixture.
Mix all the blended ingredients together in one bowl.
Add one egg white and mix in well.
Blend 3 pieces of bread and add to the beef and vegetable mixture. Mix well. This will allow you to start forming the ball shapes.
Lightly spray a baking tray with oil.
Blend 2 pieces of bread to make bread crumbs. Whisk 1 egg in a separate bowl.
Using the mixture, make large balls, dip in egg and roll into breadcrumbs. Place on baking tray. Once you have made all of the balls, spray the tops of them lightly with cooking oil and bake in the oven for 35 – 40 minutes turning half way.

Serve with homemade coleslaw, chips and peas. I sprinkled Parmesan cheese over the top of the beef and vegetable balls.
They were delicious! I made 8 large balls and still had almost half of the mixture left for another day.
