Garlic Butter Pork, Rosemary and Roasted Vegetables

This is so easy to prepare!

Ingredients – 4 x pork steaks, 30g butter, fresh or dried rosemary, 3 garlic cloves, 1 red pepper, 8 mushrooms, 2 courgettes, 1 onion, 3 carrots, olive oil spray.

To make – Preheat the oven to 190c.

Place the pork in an oven proof dish. Melt the butter and add crushed garlic. Pour the garlic butter mixture over the pork and rub it in. Add fresh rosemary.

Peel and wash the carrots, chop them up and place them in a mixing bowl. Wash and chop the remaining vegetables and add to the mixing bowl. Spray the vegetables with olive oil and mix until thoroughly coated. Add all the vegetables to the pork and cover with foil.

Cook in the oven for 45 minutes, after 30 minutes, remove foil, mix the liquid with the vegetables and cook uncovered for a further 15 minutes.

Serve with a baked potato and top with cheese.
