
Ingredients: 2 fillets of Basa fish, fish seasoning, 1 large Portabella mushroom, 1 large courgette, 6 cherry tomatoes, garlic and herb cream cheese, spray oil and cocktail sticks.
To Make:
Preheat oven to 180C
Cover the bottom of a baking tray with foil, enough so that the edges can be folded in to make a parcel before going in the oven. Spray the foil with oil to prevent fish from sticking. Place two fillets of fish on the tray. Season both sides with fish seasoning. Spread garlic and herb cream cheese over the top of each of the fish (approx 1 tbsp).
Slice the mushroom and place two slices on top of each piece of fish, slice 2 cherry tomatoes in half and place 2 pieces on top of each piece of fish. Roll the fish up and use cocktail sticks to keep in place and to make sure the vegetables stay within the fish when cooking.
Slice the courgette and place around the fish with the remaining cherry tomatoes and mushroom.
Spray all over with oil and season all over with fish seasoning.
Take the edges of the foil surrounding the baking tray and cover the fish and vegetables to make a parcel.
Cook in the oven for 25 minutes.
Serve with homemade potato salad and peas.
